Yesterday we had the honor of brewing with a fantastic and award winning brewery in Denver, @omfbrewing (Our Mutual Friend). We brewed a CO/MI Brett saison with 50% CO ingredients and 50% MI ingredients, including aged hops from both states. We are stoked to see what happens with this beer! Here is OMF’s head brewer Jan dumping some Speciation cultures into their fermentor!

Adam is transferring spent peaches out of batch 2 of Peach Genetic Drift (B1 won a silver medal at the World Beer Cup in 2018). The spent peaches are going into a fresh tank with Biomimicry wort, where we will ferment with the second use peaches, dry hop with Amarillo, Citra, and Chinook, and then add a touch of vanilla. We just picked up some Michigan sugar for priming our bottles, cans, and kegs. Every single beer we release is carbonated inside the bottle/can/keg by dosing the batch with sugar, packaging, and storing at room temp to referment and carbonate the vessel. We like using this method because it’s natural, affordable, and requires no special equipment or temperature control. It’s also essential for our beers long term stability because the live yeast inside the vessel will scavenge oxygen and keep the beer tasting fresh... even our hoppy beers.
